Ingredients

  • 4–6 ounces of salmon

  • 2 cups of chopped kale

  • ½ cup of cooked quinoa or brown rice

  • ¼ avocado

  • Pomegranate arils, optional

  • Extra-virgin olive oil

  • Fresh lemon juice

  • Black pepper

  • Garlic or herbs of your choice

Directions

  1. Bake or grill the salmon until it reaches a safe internal temperature of 145°F.

  2. Remove the tough stems from the kale and chop the leaves.

  3. Massage the kale with a small amount of olive oil and lemon juice until tender.

  4. Add quinoa or brown rice to a bowl.

  5. Top with the kale, salmon and sliced avocado.

  6. Garnish with pomegranate arils and fresh herbs.

For a simple dressing, combine olive oil, lemon juice, black pepper and a small amount of Dijon mustard.
